black lime infused rum

We typically do our infusions in small batches so we can have a few cocktails with them, but we don’t end up dominating the whole bottle. Typically we do 8oz batches to ensure we each get two. You do not have to use a high end rum for this to taste good. You don’t even need a medium end rum. We have used some real bottom of the barrel stuff and using real fruit takes the sting out of it!

WHAT YOU'LL NEED

8 oz white rum

½ of a black lime

Put your rum and black lime in an airtight container. Black limes float, so to guarantee it is submerged, you will want to weigh it down. We use whiskey stones, however, they make glass weights for fermenting or you can fill a ziplock bag with water and set it in your jar to keep the lime below the surface.
