There is a margarita in this drink that put on a slick hat and some costume jewelry. It’s as tasty as it is pretty, and while it’s a little time consuming to make and requires thinking ahead, it doesn’t require too many special skills!

SHOW OFF - EMILIA SUNRISE
1 oz tequila
1 oz pineapple tequila
1 oz lime
.75 oz agave
Bar spoon Cherry Heering
1 scoop Lambrusco ice(recipe below)
Garnish: lime wheel + lime salt rim
Glass: rocks glass, served down
To salt the rim of your glass, use a lime wedge or wheel to get lime juice all around the inside and outside of the rim and gently dip into a plate of salt of your choice.
Put it all in a shaker with ice and shake and strain into a rocks glass with a lime salt rim. Top with Lambrusco ice and garnish with a lime wheel.
We make lambrusco ice by using our ice cream maker attachment for our kitchenaid stand mixer. Make sure it’s been in the freezer overnight and add 12 oz of Lambrusco, stirring frequently to form a delicious wine slush! Add the wine slowly. It will freeze on contact with the sides, so keep the wine moving to create as much ice as you can.
For the pineapple tequila recipe, follow the instructions for our pineapple infused rum and substitute with tequila!
