We typically do our infusions in small batches so we can have a few cocktails with them, but we don’t end up dominating the whole bottle. Typically we do 8oz batches to ensure we each get two. You do not have to use a high end rum for this to taste good. You don’t even need a medium end rum. We have used some real bottom of the barrel stuff and using real fruit takes the sting out of it!
For this one, feel free to multiply if you are having company or a fun weekend.
1 cup chopped pineapple
8 oz white rum
Combine in an airtight container and let sit for at least 2 days and up to 7. The longer you leave something infusing, the stronger the flavor. Strain pineapple out and mix in your favorite drink!
